Gluten Free, Baked and Healthy: Pop-Corn Chicken!
My own rendition of Gluten Free, Baked and Healthy: Pop-Corn Chicken! Another healthy kid friendly and mom approved meal they will be gobbling right up… or popping in their little mouths!
Why gluten free?
I chose to use gluten free ingredients because my son Oliver and I have a wheat allergy. Oliver would get stomach aches every time he ate wheat and came back positive in a blood test for a wheat allergy. I have one of the genes for celiacs disease (the two genes: HLA-DQ2 and HLA-DQ8). So we just stay away from gluten ingredients. My mom found out she had celiacs disease in 2017 and has completely stayed away from gluten and anything gluten touches. I had an upper endoscopy in 2018 to test to see if I had celiacs (ultimate and final celiacs test) and the result was negative! So I have just an allergy sensitivity to gluten, but not celiacs. Yeah!!!
Why you may want to indulge in gluten free options…
Generally, gluten free foods are full of sugars and other processed items. So no, most of the time they are not healthier. They try to make up for the lack of flavor with sugars and other nasties! However, gluten free alternatives are getting better. You just need to read the ingredients to make sure none of the crap is in there. And if the item is NOT full of sugars or ingredients you can’t pronounce, then there is a good chance it can be healthier for you!
Make this pop-corn chicken recipe a complete meal
Make sure you make this a balanced meal and add some sides to it. I like to keep it simple most days and tend to add long grain rice and a tasty salad or cut up veggies! Yum yum!
Kiddos may enjoy the chicken and veggies with some dipping sauce or just ketchup… just make sure you check those ingredients to insure there is not bad sugars, additives and major preservatives in it. 😉
Gluten Free, Baked and Healthy: Pop-Corn Chicken!
Ingredients
- 2 lbs Organic skinless chicken breast cut into 2” nuggets or strips
- Drizzle Extra virgin olive oil or avocado oil
- 3 cups Crushed Nature's Path Organics- Honey Corn Flakes
- Salt and pepper to taste
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1/4 tsp Dill
- 1/2 tsp Chili powder
Instructions
- Preheat oven to 375°. Line pan with parchment paper and lightly spray with olive oil spray.
- Mix all the spices in a bowl with the crushed corn flakes.
- Drizzle the chicken strips/ nuggets with olive oil and dip them in the bowl with the crushed corn flakes and spices. Make sure they are well coated in flakes.
- Place each piece of chicken on pan in a single layer and bake until golden brown, about 10-15 minutes.
